Biite Presents: A Taste Of Brazil, by Alex Atala X Rodrigo Oliveira X Victor Vasconcellos
World class Brazilian chefs come together for one night only in the dining event of 2022. Join international culinary icons Alex Atala (two Michelin Star D.O.M. as seen in Chef's Table) and Rodrigo Oliveira (Mocotó, Caboco) with Executive Chef Victor Vasconcellos for Brazilian food, wine, and music, all for a good cause. Proceeds from the evening will be contributed to Quebrada Alimentada, an organization that has served over 80,000 meals to the food insecure in Brazil over the course of the pandemic.
The Galinhada is a simple dish, usually served large format style and meant to bring the whole family together around the table. On May 3rd, Alex Atala and Rodrigo Oliveira will be doing Galinhada their way, preserving the intention of the dish with an inventive, playful format.
The menu will be a family style dinner, with special cachaça cocktails courtesy of Novo Fogo, beer and wine from California and Brazil, and a Brazilian coffee service, all for a prix fixe of $150 plus gratuity ($180 total). Menu first look:
- Dadinhos de Tapioca
- Galinhada: traditional recipe from Alex Atala
- Pirao (broth of the Galinhada with yucca flour)
- Miudos (puisard, liver, hearts)
- Tulipinha (drummette)
- Farofa (yucca flour, toasted)
- Heirloom Tomatoes
- Collard Greens
- Amazonia (caramel cupuacu, chocolate, jambu)
