Eating is the only thing we do that involves all of the senses. According to the Father of Gastrophysics, Charles Spence, The Perfect Meal (or in this case, the perfect ramen) is just as much about the broth as it is about “everything else”— the ambiance, the lighting, the company, the plateware, and the memory of it all once it’s over. 

This collaboration between Chef David Potes and Brian DeRan of Western Desert Studio has been a long time in the making. Two friends dream up the perfect bowl of ramen: the broth, noodles, tare, toppings, and the bowl itself, handmade in Joshua Tree, CA for this dinner exclusively. The good news is, you don’t have to resist the urge to take it home. It’s already yours. 

Join us at Asi Asi supper club on Saturday April 22nd for a soulful meal featuring YUZUCO, drinks by Sake High!, a handmade ceramic bowl to take home as a relic.

ABOUT DAVID POTES
After years of steeping in B&W photography and co-publishing Hamburger Eyes Photo Zine, David Potes segued into cooking.  Having trained with Yuji Haraguchi of New York’s Okonomi and Yuji Ramen, he eventually became Head Ramen Chef. After some years cutting his teeth in Brooklyn, David became Executive Chef for the new Oko/YR restaurant locations in Japan and Bangkok. Landing in Los Angeles, Chef David found his sensibility in Western and Japanese cuisine and continues to cook globally for private dinners, events, and ramen pop ups.  Follow his culinary adventures @sleepydz

ABOUT WESTERN DESERT STUDIO
Located in Joshua Tree, CA, each piece produced by Western Desert Studio's owner, Brian DeRan, is unique, either as a stand-alone object or part of a limited edition. Though many pieces from the collections have practical uses, the primary concern is creating harmony between the shape, texture, and color of the work. Each object is made by hand. Every glaze is prepared on-site from raw minerals and oxides that lend all ceramic pieces their distinctive characteristics, and the custom furniture is created with sustainably harvested hardwoods, using time-honored joinery and hand tools.

ABOUT YUZUCO.

YUZUCO was founded in 2023 by four LA-natives aiming to make yuzu more accessible for chefs and mixologists at all levels. They import premium cold-pressed juice from Japan and work with a small network of California yuzu growers.

ABOUT SAKE HIGH! 

Sake High! is on a mission to spread the love of sake worldwide. Junmai is the Japanese word for “pure rice sake.” Junmai sake refers to non-additive sake, meaning that our sake has just four ingredients, all locally sourced in Kyoto: water, rice, yeast, koji. While Junmai sake can be served hot, warm, at room temperature, and chilled, Sake High! is best served chilled. Our sake has a full body flavor, with slight fruit and acid notes, pairing well with most cuisines.
