Chef Dom Crisp of Lonely Oyster stumbles into Chef Uyen’s Bé Ù for some Vietnamese comfort food and the two chefs bond over their connection to the gulf coast, where a large community of Vietnamese Americans reside. One chef says to the other "hey, we should throw a party!" Next thing you know we've got... 

A VIET-CAJUN SEAFOOD PARTY 
As part of E-Fish’s “Harvester’s Table” Series, they put some of the most beautiful seafood in the hands of two extremely talented chefs— Chef Dom, whose family’s roots began in French and Southern cooking, and Chef Uyen, who worked with the Vietnamese American and broader Gulf Coast community on rebuilding and community organizing after Hurricane Katrina in New Orleans and Mississippi. Together they tell the story of Viet-Cajun cuisine in California through the lens of the Ocean. 

DID YOU KNOW? 
There is a large Vietnamese American population that has settled in the Gulf Coast since the 1970’s. Like the Acadians (Cajuns) who were pushed out of what is today Canada and resettled in the 1700’s to the Louisiana Gulf Coast region, Vietnamese American food also has major French influences as well as regional influences of the native local communities and Caribbean communities. 

This Viet-Cajun food tradition is one-of-a-kind, and there’s no better duo to give you a taste than these two.

THE LONELY OYSTER
Chef Dom Crisp, born on a vineyard in Oregon, Crisp developed a palette for the finer things early. Entering the kitchen at the ripe age of 15, Chef Dom started in the dish pit and earned his burns over the hot stoves of the Portland bar and restaurant scene. Getting serious about chef work, and Portland feeling smaller he sojourned to Southern France to hone his knowledge in the intricacies of French cuisine. Knife in hand, Los Angeles beckoned with promise of Chef roles and Crisp opened and ran many seafood restaurants before anchoring at The Lonely Oyster.

BÉ Ù
Uyen Le is the Founder & Chef-Owner of Bé Ù, a Vietnamese street food and comfort food restaurant in Los Angeles, CA. Uyen previously worked in high volume Asian food kitchens, namely Cassia (Santa Monica, CA) and Button Mash (Los Angeles, CA) before opening Bé Ù in February 2021.  She also has extensive experience as a private chef, private caterer, and event caterer over the last 7 years. Uyen is a graduate of The New School of Cooking Culinary School, and The New School of Cooking Baking and Pastry School. Prior to pursuing her culinary career, Uyen graduated from UC Berkeley (Undergraduate) and the MIT Department of Urban Studies and Planning (Graduate) and worked for over a decade in community development, worker rights and advancement, economic development, and environmental sustainability.
