A Santa Maria seafood grill sesh from two of LA’s most exciting Armenian chefs. 

After taking a break from their coveted backyard cookouts to focus on opening the new III Mas Bakery & Deli, Chef Arthur returns to the format that started it all: an intimate, live-fire tasting menu that brings Armenian culinary tradition to the table— this time turning from land to sea. 

He’s teaming up with fellow Armenian Chef Travis of El Gato Negro to reimagine Summer coastal cookouts through the lens of Armenia, Mesopotamia, and the Eastern Mediterranean. Think blistered whole fish, herbaceous marinades, charred vegetables, icy Armenian wines and habibi funk— all served al fresco under a canopy of trees at a local Silverlake hideaway, @inthemeantimela.

Midya Dolma
Mussels stuffed with spiced rice, pine nuts, and currants

Mezze Course
A Spread Of Ancestral flavors of the Armenian Highlands, Mesopotamia, and the Levant 
Eech -  a comforting blend of fine bulgur, tomato, & herbs
Ful - Slow-simmered fava beans meld with garlic, lemon, and extra virgin olive oil
Hummus - Silken purée of chickpeas blended with tahini, fresh garlic, and cumin garnished with sumac & aleppo 
Khorovats Salad - Fire roasted eggplant, anaheim peppers, and tomatoes tossed in herbs in Aleppo pepper 
Ackawi Cheese and Feta - drizzled olive oil and zaatar

Egyptian Aish Baladi Pita & Palestinian Taboon (cooked over a bed of hot stones)

Masgouf (whole fish)
Grilled whole Striped Bass over a bed of Chaldean Tomato Curry served with grilled potatoes

III MAS BBQ

Chef Arthur Grigoryan is as much a scholar or historian of food as he is a rising star chef. Having honed his techniques in Paris at Drouant and continuing to grow as a chef under Nancy Silverton at Osteria Mozza, Chef Arthur combines his extensive knowledge of Armenian and Mesopotamian cooking with modern techniques to do his take on Texas-style BBQ. His concept III Mas is named after the neighborhood where his family was from in Armenia.

EL GATO NEGRO

Meet Chef Travis Matoesian of El Gato Negro, a globally inspired pizza pop-up with a strong middle eastern influence. He’s worked at some of the most iconic restaurants in the city, pulling inspiration from Bavel’s firewood cooking and a touch of chaos from Poltergeist. Not to mention his own home kitchens, having grown up in an Armenian community in Chatsworth. That’s what we call LA cuisine.
