Standing Room: Melrose Hill’s Two Rose Bread Preview

An intimate pintxos night inside one of LA’s most quietly brilliant home bakeries.

After selling Hail Mary and spending a few years traveling across continents, Chef David Wilcox came back to LA with something disarmingly simple yet ambitious: a home bakery. No announcement, no buildout, just a one-man operation in Melrose Hill, baking some of the best bread in the city, and we don’t say that lightly.

Two Rose Bread might look new, but it’s the result of years of repetition at Gjelina, Journeymen, and Hail Mary, mixing, shaping, baking, refining. Journeymen (opened in 2017 in Atwater Village and loved by Jonathan Gold) was David’s ode to San Sebastián and the culture of standing, eating, drinking, and talking. This dinner takes that same idea and brings it straight into his own kitchen.

On December 14th, David is opening his home bakery for San Sebastián–style tapas and pintxos, no seats, “like in Spain,” just a roaming spread of small bites built around the bread he’s spent decades perfecting. SoCal vegetables, a little charcuterie, a few skewers––all cooked over an open wood fire.

David’s home bakery is a working archive of where he’s been and what he’s learned. This open house is a rare chance to step inside and taste it for yourself.

It's BYOB––bring a bottle of wine, Basque cider, or a crisp ale.
