This is Nick's tribute to his grandfather, "Pa", the man who taught him to make the original Southern drop biscuit: hand stirred, delicate and made with soft Southern winter wheat. The drop biscuit is nothing like the biscuit we grew up popping out of cans - it's the product of twenty years of dedicated work perfecting Pa's recipe that unfortunately was lost when he passed away.

Nick's obsessive pursuit of the perfect drop biscuit began as a cure for homesickness. Raised in North Georgia, he spent his early childhood hand mixing biscuits alongside his grandpa, "Pa." Decades later, with a hospitality career spanning from New York to Los Angeles, he spent years recreating and refining his earliest memory of homemade comfort. Since launching his first pop-up in 2023, Pa's Biscuitisserie has earned features in the LA Times, Eater LA, and Esquire. Today, Pa's biscuits are celebrated across Los Angeles as both an exclusive, hot-and-fresh pop-up experience and a premium take-and-bake staple at independent local grocers.
