California Kimchi Workshop

A California-inspired kimchi workshop tucked inside ANDLAB, Sunook Park’s live-work studio and gallery in Chinatown.
By day, it is a design space where Sunook and his associates work in close relation to their practice. For the workshop, the space opens into a shared setting for making, observing, and understanding fermentation.
Kimchi sits at the center of Korean cooking, born out of preservation, shaped by seasonality, and made in community during gimjang, when families gather to prepare for the colder months ahead. There is no single version, it changes from home to home, batch to batch.
Sunook walks participants through the process from the ground up—salting, seasoning, and layering, placing equal emphasis on method, material, and intuition.
THE WORKSHOP
This hands-on workshop introduces kimchi as a living cultural practice rooted in fermentation, material, and place. Participants will learn a simple yet authentic method of making kimchi using an onggi pot, a traditional Korean earthenware vessel that naturally breathes, regulates moisture, and supports the beneficial microorganisms essential to fermentation.
The class covers the fundamental process while also exploring how kimchi adapts to different environments and ingredients.
What's included: Each guest will prepare their own batch and take home a handmade onggi pot, imported from Korea, filled with the kimchi they make during the workshop. Snacks and beverages will be provided, including California Wild rice and kimchi paired with Makgeolli (Korean "Rice Wine").
SUNOOK PARK
Meet Sunook Park, designer, educator, and Korean fermentation enthusiast. Sunook leads workshops that mix historical insight, fermentation techniques, and guided tastings. As president of the Korea Suul Institute and founder of the California Suul Institute, his work explores Korean alcohol and ferments as a cultural and artistic practice.
