Chef Giancarlo Scott knows a thing or two about flavor. Honing is skills with a tenure at two Michelin star Los Angeles institution Providence, Chef Gian went on to follow his own path with Rubie, applying the craft and techniques he learned along the way to the big, bright, flavors of Jamaican cuisine.

Bully Beef is a Jamaican dish typically made with canned corned beef, usually served over rice or with cabbage. It is an inexpensive and easy way to feed a small family while still offering something that's comforting. It was one of the first real dishes Chef Gian ate as a kid, which was an entry point and what ultimately gravitated him to Jamaican food as his calling. This take on Bully Beef is true to the flavor profile, but elevated with the finest 10-day-brined Wagyu, transforming this into an immaculate, handheld delight. The richness of the beef, the little bit of heat, sweetness, crunch, and slight smokiness brings Chef Gian back to those first bites.

Paired with crispy, thick-cut yucca fries with a delectable Sauce Mojo, and a first pour of limited-edition JuneShine flavor Blueberry Ginger, not found in stores, available exclusively at JuneShine tap rooms.
